Jaeger means hunter, and the mechas were basically hunting big animals. There were also light infantry units in WWII called Jaegers, and before that Jaegers were just hunters.
It is an American movie with a Mexican director that features characters from Australia, Russia, Germany and China fighting Japanese named monsters in giant robots and takes place in mainly Hong Kong.
Also I'm still not sure if Knives was Chinese or Japanese.
