I think in 2005 it's under the Minds chapter, which has yet to be published in 2010. Just use the rules found in 2005 for the time being.

I let my guys use two pistols, but usually against the same target.
This should be in the Rulebook somewhere:

Minifigs without any special abilities may fire one ranged weapon at one target. With multidexterity, they may use a single extra ranged weapon, but attacks must be made against the same target. Multitasking allows for an extra action, which can then be spent towards an attack on another target.

This is according to 2005 rules, and I imagine that the 2010 edition won't be too much different in this regard.

As far as I know, a minifig can only use 2 weapons at the same time if he has multidexterity.
