6. Neon Genesis Evangelion (No one other than us (mods, tbd, and I) reads any of this forum so you already have your reasons to watch NGE. I recommend NOT watching EoE unless you like confusion and Shinji strangling people)
7. Shingeki no Kyojin / Attack on Titan (Badass grimdark anime. Very good action anime)
8. Escaflowne (This is a masterpiece of anime. The 90's style may bother some, but it (and it's movie) are well worth the watch)
9. Code Geass (Ever wonder what would be better than mgb, Scratch, Silverdream, and Colette all working on a single masterpiece Soap? Code Geass is that and so much more (despite coming from CLAMP). Excellent multi-genre)
10. Hitsugi no Chaika / Chaika / The Coffin Princess (My first real variation to these lists. Chaika is a bit cliche, but the writing is fantastic and the characters are all interesting)
11. Puella Magi Magica Madoka / PMMM (The "NGE of Magical Gurls" genre. Do not let its happy facade deceive you; PMMM is a dark anime with masterful writing that has restored my hope in Colette's taste).
12. Noragami (Fantastic main character (If you don't like Yato, there is something wrong with you), and some pretty good writing)
13. ANYTHING by Studio Ghibli (I recommend Howl's Moving Castle, Kiki's Delivery Service, and Spirited Away)

Code Geass is a good introductory anime. It feels like it has a little bit of everything, from mecha action to drama to school-themed slice-of-life, and gives you a pretty good idea of what your average anime will feel like and typical conventions (annoying fanservice being one). It has a wide range from serious to light-hearted moments, so a similarly wide spectrum of people can find something to like about it. Plus it (or at least R1) is actually a genuinely good and enjoyable anime- R2 goes downhill, especially the Ragnarok bullshit, but recovers somewhat.

Neon Genesis Evangelion was my first anime, although I wouldn't recommend it as such to others since its depressing and psychological themes could be off-putting to someone new to anime. Nonetheless, a new fan does need to see this masterpiece early on to get a feel for what anime is really capable of. NGE is also older so it brings a distinct flavor that most newer animes lack. Of course I'm talking about the original series, not the Rebuild cash cow.

Puella Magi Madoka Magica is definitely not an introductory anime- its initial appearance can be quite off-putting, and it took a lot of kicking and dragging to get me to watch it originally. It's kind of like convincing an average person to take a calculus class. Nonetheless, once somebody's definitely into anime hook-and-sinker, they need to see PMMM for the sheer quality experience and writing (much like how average people should take a calculus class). It was really the high point for me and nothing has really equalled it since. Of course I haven't seen many anime but other, more experienced weeaboos with better taste seem to agree as well.

On an honorary note, I've found Psycho-Pass to be a good intro anime to people unfamiliar with anime and with no real intention of pursuing the media further, due to its similarity to western TV shows and lack of many common anime conventions/cliches.
Of course I'm kind of leaving out the really big stuff like Pokemon, Sailor Moon, Ghibli stuff, etc. since they've kind of transcended our little anime subculture/niche through pop-cultural osmosis.
I've never watched the Three Musketeers of anime, aka Naruto, One Piece, and Bleach with Sword Art Online as the honorary d'Artagnan. I don't feel I've missed much and I feel better for it- might be a good idea to sparknote them for conversational purposes though.

Code Geass as good introductory? It jumps the sharke ten times over by the middle of the first season! As someone new to the genre, I can tell it was still a bit alienating after having watched several others, including FLCL. Death Note on the other hand, as I hear is mutch more similar to western stuff.

That's why my list is a few different genres with pretty accessible shows. Everyone else just listed stuff they like. So many shows reference older animes and other Japanese pop culture stuff that you just won't understand if you just jump in (if that bothers you or not is up to you obvs).
A good example was in season 2 of Haruhi when the MC made a Macross reference that I guess everyone except Zahru and I missed.

Well as I understand, even Cowboy BeBop is chuck full of references to stuff like Lupin 3, and Bruce lee movies, but that doesn't stop it from being awesome. Also I didn't see Hellsing Ultimate being mentioned. Undead Piltogg Robot Vampires for the win!

Personally, I thought Hellsing Ultimate is a pretty bad beginner anime. It has a lot of really awkward jokes, edginess, and I don't even think it's that great of an anime. I watched Shingeki no Bahamut: Genesis.
Overall, it was pretty good. It was generic, but at the same time original. Would recommend to people who like fantasy anime or Pirates of the Carribean.

It's pure 80's B movie bullshit with all the ham and silliness one expects from a Schwartzenegger movie. That is at least not alien to someone wh watched westernstuff. The jokes though... They just don't fit the theme.
