I can probably build the Bold myself if that was the main ship you were gonna use.
If you want to do a story focusing on the ship and crew a series would probably be better. If you observe those shows you listed and how they deal with that premice you'll notice that each episode tends to focus on a couple select characters and develops them.
If I've learnt anything from Mr. Plinkett it's that a good story has character arcs (how they change through the story), a protagonist and the scenes have to have a point and move the story along.
We can do lots of different war themed stories involving the Immortal war, we can make up shit really because it's basically just the Immortals taking over the universe and going up against the Alliance. We could tell the story of a ship on the run from them, we could tell the beginning of the war or the middle (but not the end because that's not decided yet). We could tell the story of Warhead and his constant Mum snuggling and brutal but humorous adventures.

This sounds like fun! One question: how would we go about explaining how the immortals are, well, immortal, from an in-canon perspective? One thing I've seen (from shows with lots of recurring enemies, like Star Trek) is that you have them just be awesome for the first few episodes, then start to 'explain' the bad guys. It's a thought.
Trooper 1: Jim! You just killed an immortal!
Trooper 2: they're IMMORTAL, numbskull! You can't kill something that's immortal.
Trooper 1: then how come ye just shot this guy's head clean off with your shotgun?!?!?
Trooper2: ........It's not like that! You can 'kind of' kill them, but you can't 'ha-ha you're dead forever' kill them, they just...oh, I don't know, they re-spawn or something!
Just a funny that I thought up on the spot. Every series needs comic relief.

I like the idea of the 'Bold' being an Alliance Cruiser on the run from Immortal forces.
Now we need an excellent, flexible, and extensive reason for it. Something that we can use to stretch this out into a small series.
Perhaps their home planet was a Terran colony that was taken over by Immortals within the last 3 or 4 years, and they stole {X|X is an item key to Immortal victory on planet Y}.

Funnier if it's key to victory, but a stupid key. Like some Immortal promised the rulers of Planet Y that when he conquered them, he'd rip off the king's head and skull-fuck him with his own royal scepter. True, true. Should we do comedy like Red bs Blue where there's the serious characters and the comedic characters?
Also what if the ship is stolen and it is the thing that they want so much? The crew is too small and they get a boneriffic computer to run systems for them?

It can be done right, but it can not be done right EASILY. In fact, it's really hard (:twss:).
