The more the merrier. Personally I love lots of elite units that are around to perform specific tasks, but to each his own.

For medieval/fantasy I found that the quartet of infantry-heavy infantry-ranged-cavalry are more than enough unit types to include, not counting vehicles/machinery.

My infantry are all built with the same torso print and Atlantis armor, but they have a wide variety of roles.
They're color coded based on their role and equipment. For example, rifle-wielding Lancers are sand green with a bright green faceplate, while shotgun-wielding troopers are dark tan with a yellow faceplate.
I have a handful of elite units, but the only differentiating feature is that they have faces and an open visor instead of a full faceplate over a black, faceless head.

you know people always used to make fun of my armies saying they were similar, but maybe that is because they never really looked at them or they would have noticed my medieval armies had archers, swordsmen, spearmen and cavalry, but I guess nobody ever noticed that cause their uniforms were all the same.
